Vanilla Syrup

posted Dec 3, 2009 6:32 AM by Andy Luck

At Luck Bros' Coffee House, vanilla syrup is in our signature drink and we go through a lot of it.  I have found that with some quality extract I am easily able to make a great vanilla syrup that tastes better and saves me a bunch of money.

Start with our simple syrup recipe and add two tablespoons of vanilla extract for every cup of simple syrup.  According to Nielsen-Massey you should not add vanilla extract to hot liquids, so let the syrup cool first.

There are a variety of types of vanilla beans, you may want to blend a couple for your own signature vanilla.

Simple Syrup

Why give Torani, Monin, de Vinci, and other companies your hard earned money for a bottle of simple syrup which you can make within minutes using stuff you have on hand in any coffeehouse.

Weigh 15 ounces sugar and 10 ounces of hot filtered water on a scale.

Stir sugar and water in a large steam pitcher with a bar spoon until sugar has dissolved.  Steam mixture with espresso machine steam wand until rumble becomes dull in sound (almost boiling).  Allow to cool or place steam pitcher in an ice bath and stir.

Different sugars will give you different tasting syrup.  Sugar in the raw is tasty but not cheap and of course cane sugar and organic options are easily found.
